Italian Salad ~ a favorite recipe

Adapted from The Gingham Apron’s Italian Salad Recipe

Staple recipe right here. The only change I make to the original recipe is that I add fresh mushrooms when I have them on hand. The creamy dressing is similar to Olive Garden’s. It may seem strange, but I think the celery makes it…don’t leave it out! Unless I’m taking this to a potluck or feeding several, I just keep the dressing made up & assemble the fresh salad ingredients at the time I am going to eat it.

2 Large romaine hearts, chopped                                                                                                                1 celery rib, thinly sliced
½ small red onion, thinly sliced
½ cup cherry tomatoes, halved
¼ cup pitted black olives
8 pepperoncini
1 cup Parmigiano-Reggiano cheese, shaved

Dressing
1 garlic cloves smashed
2 Tbs mayonnaise
2 Tbs red wine vinegar
½ tsp dried oregano
¼ cup plus 2 Tbs extra virgin olive oil
salt and freshly ground pepper to taste
