Energy Bars

Adapted from Prairie House Kitchens recipe

1 cup brown sugar (sucant)

½ cup butter

2 Tb honey

½ cup peanut butter (or your favorite nut butter)

½ tsp vanilla

1 egg

1 1/3 cup fresh ground wheat flour

1 tsp cinnamon

½ tsp baking soda

1 tsp salt

1 ½ cups brown rice crispies

1 ½ cups rolled oats

¼ cup sunflower seeds

¼ cup pumpkin seeds

1 cup chocolate chips (dark semi-sweet)

1 cup shredded unsweetened coconut

1 cup dried cherries, cranberries or raisins

Preheat oven to 350 & grease 11×15 pan. In mixer with wire whips attachment, cream sugar & butter. Add & blend together honey, peanut butter, vanilla & egg. In separate bowl stir flour, cinnamon, soda, salt, rolled oats, rice crispies, both seeds together. Add to creamed mixture & combine well. Switch to cookie paddle attachment & add chocolate chips, coconut & berries. Combine. Turn into greased pan & press down evenly. Bake 22 mins.
