This is my version of the popular protein balls that have shown up on some of the fitness blogs that I follow. Keep them in the fridge for a quick and healthy snack. I tweaked The Fitnessista‘s version and here are the “amazeball” results! Feel free to tweak away as the recipe is super flexible. Really the possibilities are endless. Hope you enjoy them as much as we do!
Here is what you need….
4 Tb Vanilla Protein Powder (Sunwarrior is my fav!)
4 Tb drippy nut butter of your choice (I am loving Once Again Organic Sunbutter!)
4 Tb unsweetened shredded coconut
2 Tb pure maple syrup (honey should work as well)
2 dashes each of Real Salt and cinnamon
2 Tb cocoa nibs
Place the nut butter, protein powder and coconut in food processor. Pulse a few times. The mixture should resemble this:
Then add in the remaining ingredients and pulse again. It will start to clump together more like this:
Now you just use your hands to shape the mixture into balls. That’s it! Store them in the refrigerator. This makes about 6-8 balls.
