Easy Blackened Flounder


4 filets of flounder, thawed (if frozen) and rinsed
oil for skillet, just enough to cover bottom of skillet (I use refined coconut oil)
2 garlic cloves, minced
blackening seasoning (I used Old Bay Blackening Seasoning, but I’ve heard Zataran’s is really good…you can also easily make your own)

Season one side of the fish. Heat oil in skillet over medium heat. When oil is ready add garlic and then immediately place the fish seasoning side down over top the garlic in the hot oiled skillet. While it cooks a few minutes go ahead and season the side facing you. Flip and cook a few minutes on the other side until flakes white. My filets were pretty thin so this literally only took 2-3 minutes each side. I could tell it was done because it became tender, flaking and white instead of opaque.
