Mediterranean Bean Salad

I got this recipe from my “The Everything Mediterranean Cookbook”. It is very good and healthy. Perfect for summertime : )

6 servings

1 large red onion, sliced thinly
3 sprigs marjoram (I used dried)
1/4 cup kalamata olives, roughly chopped
1 cup green beans, cooked in boiling water until al dente (about 5-7 mins) and then shocked in ice-cold water, then drained
1/2 cup cooked red kidney beans, drained (canned is fine)
1/2 cup cooked chickpeas or cannellini beans, drained (canned is fine)
2 Tb extra-virgin olive oil
1/2 cup balsamic vinegar
Fresh-cracked black pepper, to taste

Mix together all ingredients in large bowl. Adjust seasonings if necessary.
