These cookies are so awesome and so healthy that I wouldn’t mind using them as a quick breakfast for the family. Next time I plan to make frozen cookie dough balls, so that I can pull out how ever many I want at a time & bake them.
MUESLI CHIP COOKIES

1 cup muesli (I make this recipe for Goji Muesli)
3/4 cup whole wheat flour
2/3 cup kefir/yogurt/buttermilk
1/4 cup sucanat or rapadura
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla extract
1 tsp cinnamon
dash of nutmeg
1/2 cup unsweetened coconut flakes
1/4 cup chocolate chips (I prefer semi-sweet or bittersweet)
Mix muesli, flour and dairy in large bowl and let stand on counter top overnight (or at least a few hours for muesli to get soft). Preheat oven to 375. Mix in sugar, eggs, baking soda, salt, vanilla and spices until evenly combined. Then add the coconut and chocolate chips. On greased cookie sheet, drop by the tablespoon full and bake 12-15 mins or until lightly browned. Makes about 12-15 cookies.
