Slow Cooker Honey Mustard Chicken with Soaked Brown Rice

The whole family asked that I would make this again. It was wonderful and so easy! I didn’t get a picture before we scarfed it down, so you will just have to make it to see what it looks like *wink*.

Soaked Brown Rice:
2 1/4 cups filtered water
1 cup brown rice
juice of 1/2 lemon or 2 Tb whey
1/2 tsp salt

Honey Mustard Chicken:
1/4 cup honey
1 Tb Dijon mustard
1/2-1 tsp curry powder
1/2 tsp salt
1/8 cup butter
1.5 lbs. chicken thighs

Place the rice, water and lemon juice in a saucepan and cover, letting stand on counter overnight or for 7 hours. Just before cooking add the salt. Bring to a boil; boil 5 mins uncovered, then reduce heat to simmer, cover with lid and cook until tender about 30 mins.

Put the thighs in a crock pot. Combine honey, mustard, curry, salt and butter in saucepan and bring to a boil. Boil for 1 min, then pour over chicken. Cook on low for about 6 hours.
