I came up with this yummy, healthy combination today. It’s delicious!
Grilled Chicken, Romaine and Mung Bean Sprouts Salad with Balsamic Vinaigrette
enough romaine lettuce to fill your bowl
handful of sprouted mung bean sprouts
handful of leftover grilled chicken breast strips (I highly recommend marinading before grilling using Drew’s Roasted Garlic and Peppercorn marinade/dressing )
recipe for balsamic vinaigrette to taste *below*
Just mix all these things together.
1 Tb whole-grain country style mustard (ya know the kind with the little mustard seed things)
5 Tbs balsamic vinegar
1 tsp olive oil
Fresh ground pepper
1 large clove of garlic
a sprinkle each of dried oregano leaves and dried basil leaves
