How To Soak And Dehydrate Nuts

Nuts contain many enzyme inhibitors that make them difficult to digest. Following Nourishing Traditions method for soaking and dehydrating them will make them easier to digest, as well as make their nutrients more available.

Soaked and dehydrated nuts (almonds, peanuts, pecans, pine nuts, hazelnuts, macadamia, *cashews)
makes 4 cups

4 cups nuts of choice
1 Tb Real Salt
filtered water

Mix nuts with salt and filtered water. Leave in warm place for at least 7 hours. Rinse, drain and dehydrate (no more than 150 degrees) for 12 – 24 hours or until completely dry and crisp. This can be done in your oven on stainless steel baking sheet if it has a setting low enough (no more than 150 degrees).*for cashews don’t soak for longer than 6 hours because they will become slimy and taste bad. Also for cashews dehydrate at about 200 degrees as they need to dry quicker than the other nut varieties.
