Mini Crustless Breakfast Quiches

We really enjoyed this low-carb, no grain recipe. I will be adding it to our regular rotation.There are endless variations to the “add-ins”. Play with it and find out your family’s favorite combination.

Mini Crustless Breakfast Quiches 

12 eggs
3/4 cup heavy cream
1/4 tsp sea salt
1 cup shredded cheese (we used cheddar), we thought they could have used a little more cheese, so next time we will probably add another 1/2 cup or so

Optional Add In Ideas:
cooked bacon, chopped (this was the only add in we did this time)
cooked sausage, crumbled
small can of green chilies
cooked ham, chopped
hashbrowns or chunks of cooked potato like leftover baked potatoes
sauteed vegetables
raw spinach
taco seasoned meat
cooked chicken

Liberally butter 24 regular sized muffin tins. Whisk the eggs, cream and salt together in large bowl. Sprinkle in any add in ingredients (a total of 1 cup of add-ins). Stir around to combine. Pour or scoop mixture into muffin tins. Bake in 350 oven for about 22 minutes, or until middles don’t jiggle.
