Sweetheart Fruit Salad

This fruit salad is absolutely delightful! 

I like that it has simple, straightforward, and healthy ingredients that I most always have on hand. I had a sweet tooth today and it was the perfect thing to satisfy. This recipe would be very flexible and I think that fresh sliced banana and or frozen blueberries would be great additions. Obviously you could use fresh berries in this, but I’ll tell you…I think the partially thawed frozen ones make it terrific. It makes it really cold and yummy.

Sweetheart Fruit Salad by: Heavenly Homemakers
makes about 4 servings

1/2 cup heavy whipping cream
1/4 tsp vanilla
2 red apples
1 cup frozen strawberries
1/2 cup frozen raspberries
1 tsp xylitol or sugar, optional (this wasn’t in the original recipe but I added it and am glad I did. Even with this added the dessert was quite tart)

Place the frozen berries in a bowl out on counter to thaw slightly, about 45 minutes. Sprinkle some sweetener over berries if using. In separate bowl beat cream with mixer until soft peaks form. Stir in the vanilla. Cut apples and berries into bite size pieces and fold into the whipped cream. Serve in small glass bowls or dessert dishes.
