Vegetable Beef Soup

This soup was really, really, really good!

1 lb beef stew meat
2 cups water + more as needed
1 14.5 oz can stewed tomatoes, with juices
1 14.5 oz can diced tomatoes, with juices
chopped vegetables of choice (we did 1 potato, 2 carrots, 1/2 head shredded cabbage & 1 turnips) other ideas are green beans, corn, baby lima beans, okra, celery, peas, onion
2 tsp salt
1/2 tsp pepper
1 tsp chili powder
fresh cloves garlic minced (about 1 tsp)
1/2 tsp cumin

Brown meat in large stockpot; add water & cook about 10 mins or so until nearly tender. Add vegetables, seasoning & tomatoes with juices. Let simmer at least 1 hour, adding more water as needed. Serve with shredded cheddar cheese & garlic bread if desired.
