This cake only has four ingredients & happens to be sugar free, flour free, gluten free & dairy free. We really enjoyed it. Passed the husband, children AND mommy test! I made some homemade whipping cream sweetened with a little vanilla creme flavored stevia. This would be excellent with some fresh berries as well.
150 g ground almonds (I weighed mine out on a scale, but if you don’t have one it was probably about 1 1/2-2 cups whole almonds) You can grind in a food processor or high powered dry blender
5 eggs, separated (whites in one mixing bowl & yolks in another)
3 Tb xylitol
Preheat oven to 325. Separate eggs & beat whites first with the salt until stiff. In separate bowl beat yolks with xylitol until it turns a light yellow. Add ground almonds to yolk mixture & then fold in whites. Put in greased 9″ pan. Bake 50 mins, then let cool in pan.
