Cheesecake-Stuffed Peaches

Oh my! These are fabulous! No wonder they won a contest in Better Homes & Garden.

Makes 6 servings

6 peaches, halved & pitted
1/4 cup butter, melted
3 Tb Cinnamon-sugar
4 oz cream cheese, softened
1/4 cup sugar or xylitol
1 egg yolk
1 1/2 tsp vanilla

Preheat oven to 350. Line a baking pan with either foil or parchment paper & set aside. Dip each peach halve into melted butter & place on sheet cut side up. Sprinkle with cinnamon-sugar. In a mixing bowl beat cream cheese until smooth, then add sugar, yolk & vanilla. Beat until combined. Spoon onto the center of the peach. Bake uncovered for 30 mins.

  1. These look wonderful, Torie! I think I saw them in a magazine just this last week and wondered about them. With your stamp of approval I will give them a try just as soon as peaches arrive in our area!:~P
