Spicy Carrot Fries with Tzatziki Sauce


I got this yummy recipe from tastykitchen.com. Probably my favorite way to eat carrots! I cut the Cayenne pepper in half so it is not so spicy that my children can’t eat it. But if your family loves spicy do the whole 1/2 tsp.

FOR THE CARROT FRIES:
8 whole medium carrots
3 Tb olive oil
2 tsp curry powder
1/2 tsp Cayenne (I do just 1/4 tsp)
1 tsp salt
1-1/2 tsp cumin powder

FOR THE TZATZIKI SAUCE:
1 whole cucumber, peeled & diced
1/2 Tb lemon juice
7 oz, weight Greek yogurt
2 Tb dill
3 Tb sour cream
1 tsp salt

Preheat oven to 425. In large bowl, toss carrots with oil, curry, cayenne, salt & cumin. Evenly spread out on a baking sheet making sure that the carrots don’t overlap. Bake for 20-30 mins or until golden brown. For the tzatziki sauce, add all the ingredients to a food processor & blend until thoroughly incorporated. Transfer to a bowl & refrigerate for 15 mins.
