Fruit-On-The-Bottom Baked Oatmeal



This is FABULOUSLY delicious!!! The whole family loved this recipe I got from Cooking For Seven. The next time we have overnight company, I will be making this to serve for breakfast.

FRUIT-ON-THE-BOTTOM BAKED OATMEAL
serves 6-8

1 1/2 cups thinly sliced fruit (or enough to generously cover bottom of 9 inch square baking dish)
1 1/2 sticks butter, melted & divided
1/2 cup whole milk
2/3 cup pure maple syrup
2 large eggs
1 tsp vanilla
2 cups oats
2 1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
4 Tb sucanat, divided
1/3 cup nuts
Preheat oven to 350. Melt all butter & pour 1/4 cup into bottom of 9 inch baking dish. Arrange sliced fruit on top of butter & sprinkle fruit with 2 Tb sucanat. Set aside. In medium bowl mix together milk, eggs, syrup, vanilla & remaining melted butter. In large bowl whisk oats, baking powder, soda & salt. Stir wet into dry & mix well. Pour over fruit. Sprinkle with remaining sucanat & nuts. Bake 35-40 mins. Serve plain or with milk, cream or the vanilla sauce here. So Yummy!!!
