Slow Cooker Curried Coconut Chicken

I really enjoyed the “different”ness of this recipe & it was kid approved which makes it a keeper.


1 can coconut milk
2 tsp curry powder
S & P
3 boneless skinless chicken breasts (I used chicken thighs)
1 bag frozen stir-fry mixed veggies

1 cup rice, cooked
1/2 tsp ground ginger
1/2 tsp curry powder

Lightly spray your slow cooker with nonstick spray. Pour the coconut milk in, whisking away any chunks of the milk if necessary. Whisk in curry powder & salt & pepper. Place breasts or thighs on top of milk. Top with frozen veggies. Cook on low all day (8 hrs). Serve over cooked rice. Season the rice with a few dashes curry & ginger for extra flavor if you like.
