Salad Wraps

These make a great lunch & are so healthy you will live an extra decade by partaking.


1 1/2 cups raw sunflower seeds, soaked & dried
4 celery stalks, finely chopped
5 carrots, grated in food processor
about 1/4-1/2 cup each of chopped red onion & scallions
the juice of 1 lime or lemon
1/2 cup raisins
a little bit of fresh grated ginger
2-4 garlic cloves (depends on your tastes)
1 tsp sea salt
3 tsp olive oil
Butter lettuce or Romaine lettuce leaves for wraps

Using a blender or food processor, coarsely grind the seeds (doesn’t have to be too fine..can leave some seed chunks). Mix everything together tossing with your hands & serve on the leaves as wraps. Will keep in fridge 3-5 days.
