Pineapple Coconut Dip

This is a healthy & yummy dip/spread! It is free of any added sugar & gets its flavor from the coconut oil & pineapple juice concentrate. You can serve it with fresh fruit or try it on bagels. My husband who is not a fruit eater loved it & said he would start eating fresh fruit if I would keep making it. It passed the kid test too. I found the recipe at http://pccuisine.com/

2 Tb virgin coconut oil (virgin is important here b/c refined doesn’t have the coconut flavor), melted
1/2 cup frozen pineapple juice concentrate, thawed
8 oz cream cheese, room temp
1/2 cup coconut flakes, unsweetened (toasted golden)

Mix juice & oil until smooth. Add cream cheese & whip until light. Put in serving bowl & top with the toasted coconut flakes.
