Navajo Tacos

I got this recipe from sisterscafe blog. The family really enjoyed it. As a child I remember eating these “Indian Tacos” at our friend’s the Nightengales. I’m pretty sure Trisha would make her dough from scratch. She was an excellent cook. These are so much easier than scratch. You are going to probably want 2 rolls per per person so this recipe would serve about 6.

Navajo Tacos aka Indian Tacos

12 Rhodes Texas Rolls, thawed & risen per package directions
vegetable oil for frying
1/2 lb ground beef
4 green onions, finely chopped
1/2 cup picante sauce or salsa
1 clove garlic, minced
2 c canned pinto beans
1 c shredded cheddar cheese
1 c shredded lettuce
2 med tomatoes, chopped
1 med onion, chopped
sour cream

Flatten each roll (after thawed & risen per pkg) to a 6 inch circle. Fry in veg oil at 375 until golden brown, turning over once (about 30 scds). Drain on paper towels.

Fry beef & onion, adding garlic towards end. Drain fat. Add salsa & beans & heat through. Do not over cook.

Spoon desired amount over warm fried dough. Top with cheese, lettuce, tomato, onion & sour cream. Eat in tepee with colorful head dress.
