We came up with this chili recipe after watching an episode of Diners, Drive Inns & Dives. I took note of the general ingredients & we tweaked it to our taste. What makes this chili unique is that you don’t brown the meat first….you just throw everything in the pot at once. We love cooking it in a cast iron dutch oven. It is simmered on LOW for at least three hours. My husband says its the best he’s ever had.
2 lbs ground beef
2 14.5 oz cans petite diced tomatoes
1/8 cup dark roasted chili pepper powder
1/2 Tb ground red cayenne pepper
1/4 cup smoked paprika
1 diced onion, yellow
4 cloves garlic crushed with garlic press
2 Tb cumin
1/2 Tb crushed red pepper
about 1 tsp sugar or xylitol
Salt & Pepper to taste
Add later: 1/2 Tb chili powder + 1 tsp salt
Throw everything except the “add later” into a dutch oven (cast iron is wonderful), cover & cook on low for 2 hours. Do not brown your meat first!!! Stir occasionally. After two hours, taste & add the “added later” ingredients to your taste. Cook on low an additional hour. So three hours total. Dig in!
