Mom’s Cream of Asparagus Soup

I first enjoyed this yummy soup several years ago when my mom made it for our family in the Dark Forest house. It is delicious & not difficult at all to make.

Mom’s Cream of Asparagus Soup

1 medium onion, chopped
1 clove garlic, minced
3 cups cut fresh asparagus (1 inch pieces)
2 1/2 cups chicken broth
1/8 tsp pepper
3 oz cubed cream cheese
2 Tb sour cream
1 Tb snipped fresh dill (or about 1 tsp dried)
1/2 tsp ground nutmeg

Coat skillet with non-stick spray (or a little EVOO) & saute the onion & garlic until tender. Add asparagus, broth & pepper. Bring to a boil, reduce heat; cover & simmer 15 mins or until tender. Place 1/3 mixture in blender or food processor along with the cream cheese, sour cream & dill. Cover & process until smooth. Return to pan, cover & cook over medium heat until heated through.
