Zucchini Mozzarella Medley

This is a wonderful side dish that the whole family will love!

3 cups sliced zucchini
1 cup sliced onion
1 garlic clove, minced
1/2 tsp dried basil
1/4 tsp dried oregano
1/8 tsp salt
3 Tb butter
1 medium tomato, cut into 12 wedges (optional..I didn’t add this)
1 cup shredded mozzarella cheese (optional…I only did the children’s portion with cheese)

In a large skillet, saute zucchini, onion, garlic & seasonings in butter until crisp-tender. Gently stir in tomato wedges; sprinkle with cheese & remove from heat. Cover & let stand 1-2 mins until cheese melts. Yield: 4 svgs
