Lemon Poppy Cookies

These “raw” treats are made in the dehydrator which protects the healthy enzymes that cooking destroys. They are very delicious! My husband & children even gave them a big thumbs up. If you like lemon flavored sweets you will love these.

Lemon Poppy Cookies

1 cup almonds
3/4 cup dates, pitted and soaked ( just let them sit covered in water for a few hours)
1/2 cup freshly squeezed lemon juice
2 Tb poppy seeds

Blend almonds in food processor until fine.
Add in dates & juice & process until smooth. Add in the seeds & blend just until mixed in well. Spoon out into small round balls or flat cookies onto mesh dehydrator screens. Dehydrate for 3-4 hours at 105 degrees.
