Lemon Delight Muffins

Lemon lovers will thank me for these melt-in-your-mouth muffins! Very “tea room -ish” ; ) I love to order the fresh organic lemons from my food-coop and find new dishes to make with them. These would be great for a brunch or even a light dessert. They are very light & lemony, but sweet enough to please a sugar craving. They have a lemon syrup glaze to drizzle on top. MMMMMMMMmmmmm!!!

Lemon Delight Muffins
makes 12 muffins

2 cups unbleached flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/4 cup sugar
2 Tb honey
2 eggs
1 1/4 cups plain yogurt, room temperature (I used low-fat)
1/4 cup butter, melted
2 Tb lemon juice
zest of 1 lemon

Preheat oven to 350. Grease muffin tins. Combine flour, baking powder, soda & salt. Set aside. In another bowl, combine remaining ingredients. Add dry ingredients & mix. Fill muffin tins to 2/3rds full. Bake for 15 mins or until toothpick in center comes out clean.

Lemon Syrup Drizzle

2 Tb lemon juice
1/3 cup powdered sugar

Combine ingredients mixing well so there are no lumps. Drizzle over warm muffins. Next time I make these I may double the syrup recipe b/c my family wanted extra on each muffin!
