Oatmeal Nut Butter Cookies


The only problem with these is I couldn’t stop eating them! They are delicious & made with some pretty healthy ingredients.

Oatmeal Nut Butter Cookies

1/3 cup nut butter (I used homemade cashew butter)
1/3 cup milk
2 Tb canola oil (I used extra virgin coconut oil -melted)
1 tsp vanilla
1 cup sucanat (sucanat is sugar in its most natural form)
Mix these first 5 ingredients then add:
1 cup whole wheat flour
1/2 tsp salt
1/2 tsp baking soda
1 cup oatmeal
1/2 cup chocolate chips (or carob chips)
1/2 cup chopped walnuts
Mix & drop by tsp full onto baking sheet. Bake at 425 for about 8 mins. If you can eat just one, you are my hero!
