Red Potato, Bacon & Onion Fritatta

I came up with this one about a month ago and am just now getting around to posting about it. My children LOVE it. I have tried it with different types of cheese, but our favorite is a smoked cheddar/swiss block. It gives it an extra special flavor. Fritattas are so quick & easy that I often whip them up for dinner along with a few sides.

4 eggs, lightly beaten
3-4 slices of bacon cooked in a fry pan & then crumbled
3-4 cooked small red potatoes (to cook just cube up, place in a saucepan of boiling water & cook until fork tender about 7-10 mins)
1 cup shredded cheese of your choice
1/2 cup diced onion (red onion, white, yellow or green all work well)
Salt & Pepper to taste

In a 10 inch oven proof, nonstick skillet, brown your bacon & pour off most of the grease. Add onion & saute until clear. Add cooked potatoes & saute a few mins to make a little crispy on outside. In same pan add the bacon back & distribute onion, potato & bacon evenly around the pan. Salt & pepper the beaten eggs & pour them over top of bacon & veggies. Swirl your pan to evenly distribute the eggs. Sprinkle with cheese, turn heat to low & cook for about 2 mins. Turn broiler on & place the pan in oven for 3-4 mins or until lightly browned.
