Roasted Garlic Cauliflower


I tried this recipe from Sister’s Cafe & it is a delicious way to eat cauliflower. I did add some strips of red pepper which I think is a good way to add extra color & flavor.

Roasted Garlic Cauliflower

2 T minced garlic
3 T olive oil
1 lg head cauliflower, washed and seperated into small florets
1/2 cup grated parmesan cheese
salt and pepper to taste
1 T chopped fresh parsley (optional)

Preheat oven to 450. Grease or butter a large casserole dish. Place olive oil
and garlic in a large resealable bag. Add cauliflower, and shake to mix. Pour into the prepared baking sheet. Bake for 25 minutes, stirring halfway through. Top with parmesan cheese and parsley and broil for 3 minutes. (If you like, don’t broil, but just stick it back in the oven for a few minutes longer)
