Asparagus Frittata

This is a beautiful, delicious, rustic, easy one dish meal for lunch, breakfast, or dinner. I love it!

2 tsp olive oil
1 sm onion, diced
1/2 tsp salt
1 lb. asparagus cut diagonally, into 1 inch lengths
4 large eggs
1 cup shredded cheese such as swiss, cheddar, parmesan or Gruyere

Heat oil in a 10 inch oven-proof skillet/fry pan over medium heat. Add onions & salt & cook, stirring occasionally until the onions are softened about 3 mins. Add asparagus, reduce heat to med-low & cook 6-8 mins until asparagus is barely tender. Pour in eggs & cook till almost set, but still runny on top, about 2 mins. Pre-heat broiler. Sprinkle cheese on top & broil about 3-4 mins.
