Carmine’s Vinaigrette

This vinaigrette is a great example of how a few simple ingredients combined together can knock your socks off. It tastes like the fabulous salad dressings you get at Italian restaurants for good reason…it is from one ~ Carmine’s in New York. I’ve never been to Carmine’s or New York for that matter, but I do have Carmine’s Family-Style Cookbook & after trying this recipe, I’m looking forward to trying more from the cookbook. Keeper recipe for sure! I could not get a good picture of this so you’ll just have to use your imagination or better yet, make it!

Makes about 1/2 cup

Juice of 1/2 lemon
2 Tb imported red wine vinegar
pinch of dried oregano
salt & freshly ground black pepper
1/4 cup extra-virgin olive oil

In a small bowl, whisk together the lemon juice, vinegar, oregano & salt & pepper to taste. Slowly whisk in the olive oil until it is well blended. Dressing can be stored in the frige for up to 10 days. When serving after refrigerated, set out a few mins so the oil can soften. Shake well before using each time.

  1. tried it added a little garlic powder and sugar to round out the acid. i ate at carmines in newyork wed. 14 2011 was awesome make resevations or getting in is tricky somtimes

  2. Celebrated my 50th bday at Carmines yesterday. Yummy food and great service and great place for a group. I can’t wait to try this! Thanks.

  3. Good Dressing but I add 1 tbl of honey to round out the acid and the tartness just whisk it well. Put the mixture in the microwave for about 10 seconds to be able to dissolve the honey completely.
