1/3 cup balsamic vinegar
1/3 cup dijon mustard
1/4 cup olive oil
1/2 Tb minced garlic (I did 2 cloves)
1 Tb honey
Salt & Pepper to taste
1 lb. boneless skinless chicken breasts
Mix all marinade ingredients. Cut chicken into bite-size chunks large enough to thread onto skewers. Toss chicken with marinade, cover & refrigerate 1 hour. We left it overnight. Grill 12-15 mins, turning often or bake in a 350 degree oven.
