2 cups all-purpose flour 6 Tb milk
1 cup white sugar 2 1/2 tsp baking powder
1 cup mashed ripe banana 1/2 tsp baking soda
1/2 cup margarine 1 ground cinnamon
2 eggs 1/2 tsp salt
In a medium bowl mix flour, baking powder, soda, salt & cinnamon & set aside. In a separate bowl cream butter, sugar & eggs with an electric mixer until smooth. Stir in the milk & banana & mix well. Fold in flour mixture until combined. Bake in greased muffin tin @ 350 oven for 20 mins or until lightly browned. VERY IMPORTANT note: Drink with FREEZING COLD milk…in a glass not a plastic cup!!!
