Wilted Spinach & Bacon Salad

I liked this salad…a lot! If a dish has balsamic vinegar in it, I’m usually a happy girl.

Wilted Spinach & Bacon Salad
2 svgs
4 oz lean bacon, cut into 1” strips (4 strips)
2-4 cloves garlic, sliced lengthwise
1 tsp sugar
1/2 tsp black pepper
2 -3 Tb olive oil
1 Tb balsamic vinegar
1/2 lb fresh spinach
Saute’ bacon in a small skillet. Pour off grease. Add garlic & saute until light brown. Add sugar, pepper & stir until sugar dissolves. Add olive oil & vinegar. Add spinach & stir until just wilted. Serve immediately.

  1. I made this and it is a definite keeper! I did not have any balsamic vinegar, so I used a balsamic garlic salad dressing that I had . . . oh so yummy! Thanks.
