This granola is sooooo good & healthy. Just keep a batch in the fridge & eat it for breakfast with plain yogurt & fresh fruit. Or another idea that my cookbook recommended is to add it to your pancake batter or even sprinkle on top when served. This makes 9 1/2 cups & will keep up to 2 weeks in the fridge.
TEA ROOM GRANOLA
4 1/2 cups rolled oats
1/2 cup walnuts, chopped coarsely
1/2 cup sunflower seeds
1/2 cup almonds
1/2 cup cashew, pieces
1/2 cup pumpkin seeds
3/4 cup maple syrup
1/4 cup honey
1/4 cup canola oil
1 tsp vanilla
1 1/2 cup dark raisins (optional)***
Place oats, nuts & seeds in bowl & mix well.
Mix together syrup, honey, oil & vanilla & pour over dry ingredients, coating thoroughly.
Place in large shallow pan & bake @ 350 for 45 – 60 mins (mine only took 30), stirring every 10 mins until browned. Add raisins. Allow to cool & refrigerate in airtight container. ***Be sure to add raisins AFTER baking or they will become tough. From the cookbook “With Love, From Cynthia”.
