Mom’s Peach Cobbler


Don’t let the looks of this cobbler fool you. It is pretty ugly, but that is entirely my fault. With the right hands it could look as good as it tastes. Mom’s is always pretty. I also need to roll out the crust flatter next time as my lattice work was a tad thick. With looks aside….this is to die for. So delicious & easy. I served it with homemade whipped cream & (storebought) vanilla ice cream.

Mom’s Peach Cobbler

Pie crust:
1 cup all-purpose flour
1/4 tsp salt
1/3 cup plus 1 Tb shortening (use butter flavor if you have it for extra yummy flavor, but it’s fine with plain)
3-4 Tb ice cold water as needed
Stir first 2 ingredients together to combine. Add next 3 ingredients & crumble with hands. Roll out dough on floured surface. Cut into lattice strips.
Filling:
1 large can peaches or a couple of regular sized cans (drained)
1/2 cup sugar
dash of salt
1/2 tsp cinnamon (this really sets it off in my opinion)
1-2 Tb butter (dotted on top)
Mix all filling ingredients except butter & pour into a 8×8 inch glass baking dish. Layer strips of crust over filling & dot with butter.
Bake in 350 degrees oven for about an hour.
