Playgroup Granola Bars

I got this recipe from my friend Lindsay. These are the best granola bars I’ve ever wrapped my lips around.

Playgroup Granola Bars
Preheat oven to 350
2 cups old fashion oats
1 cup whole wheat flour
1/2 cup wheat germ (or *1/4 cup ground flax + 1/4 cup wheat germ)
1 tsp cinnamon
1/3 cup brown sugar (I used dark brown which I think added more flavor)
1/4 cup raisins, *1/4 cup finely chopped dried apricot, & 1/4 c white chocolate chips
(instead of what I used above you can use dried cherries or many other things)
1/4 cup sunflower seeds
3/4 tsp salt
1/2 cup chopped walnuts
Mix above in large bowl & make well in the center. *If you have a Majic Bullet or small blade food processor, this makes chopping the flax & the dried apricots super easy.
Mix below together in seperate small bowl. Then pour into the well of dry ingredients.
1/2 cup honey
2 eggs, beaten
1/2 cups walnuts
1/2 cup canola oil
2 tsp vanilla
Mix well using your hands. Pat evenly into sprayed 9 x 13 baking pan or jelly roll pan. Bake about 30 mins or until golden brown. Cool 5 mins, then cut into bars. Don’t allow to cool completely before cutting!
