Wow! This recipe that I got from my friend Mica tastes just like the soup in Restaurants!!! I used fresh basil from my garden which made it fun : D This was a snap to pull together. It didn’t take more than 10 mins.
Tomato Basil Soup
2 Tb butter
1/2 yellow onion, chopped
1 tsp miced garlic (or more)
4 cans diced tomatoes or 8 cups fresh, chopped
2 tsp -1 Tb fresh basil, minced
1 cup half & half
Salt & Pepper to taste
Saute’ butter, onion & garlic for 5 mins. Let cool a few mins. Add to large food processor along with 3 cans of tomatoes (or about 6 cups fresh) & the basil. Process until smooth. Move to a soup pot along with the last can diced tomatoes (or about 2 cups fresh), cream & salt & pepper to taste.
