There are two ways to eat this…both equally wonderful. One is to serve cold like potato salad & the other option is to bake & serve hot like a baked potato. Depending on your mood you can serve it either way. The dish pictured is the cold version. The warm version works perfectly in the crock pot too by the way.
8 potatoes, cubed (half of them peeled & half leave skin on)
2 tsp salt
6 slices bacon, diced & crisply cooked & crumbled
6 green onions
2 cups cheddar cheese, shredded
16 oz (2 cups) sour cream
1 cup mayo
1/4 tsp pepper
Cube into bite size & boil tators w/ salt in large pot boiling water & drain. Combine sour cream & mayo. Add to potatoes then add in crumbled bacon, cheese & sliced green onions. (You can reserve some of each to top with, but I didn’t bother)
If baking for hot version: Pour into baking dish & garnish with reserve if desired. Bake 10-15 mins @ 350.
If serving cold just pour into serving dish & refrigerate.
