I admit it, my kids have been raised eating store bought frozen bean & cheese burritos. They love them, want them every few days & lets face it….mom has loved the ease of poping them in the microwave a few mins & lunch is ready.
I’m very excited to say that I have found a recipe for these on recipezar that is off the charts in both taste & ease. I will NOT be buying the pre-made anymore! Not only are these healthier because I can pronounce every ingredient going in, but they are tastier & cheaper as well. Are you sold yet?
Serve these with some jarred taco sauce (we love Old El Paso) & a dollop of Daisy light sour cream. At only 356 calories per burrito I can afford to add 1 Tb taco sauce & 1 Tb of light sour cream & have a decent calorie lunch. Even with a small 100 calorie size coke you are under a 500 cal lunch.
I’m doing an experiment to see if they freeze well, so I’ll do an *update* when we heat those up & let you know how that goes.
Cheese & Bean Burritos (makes 7 – 10 burritos)
32 oz (or 2 16 oz) cans of vegetarian refried beans (I used fat-free)
4 oz can chopped green chilies
1/2 tsp cumin
1/2 tsp garlic powder
8 oz shredded cheddar cheese (or about 1 Tb per burrito)
Preheat oven to 400 degrees. Spray a large baking sheet with non-stick cooking spray. Mix beans, chilies, cumin & garlic powder together in bowl. Spoon mixture into center of tortilla. Sprinkle about 1 Tb cheese over bean filling. Fold in the ends & sides of tortilla. Bake 20 minutes.
