This is another dish I made for the funeral on Tuesday. I loved it & it is still really good leftover…what little I had leftover.
Mixed Vegetable Casserole
1 (15 oz) can Veg-All, drained
1 (8 oz) can sliced water chestnuts, drained
1 cup grated sharp cheese
1 cup chopped celery
3/4 cup mayo
1 small onion, chopped
20 Ritz crackers, crushed
2 Tb melted butter
In large bowl, mix the Veg-All, water chestnuts, cheese, celery, mayo, & onions; transfer to a greased casserole. Bake @ 350 for 30 mins.
Meanwhile, combine the cracker crumbs & butter (an easy way to do this is to place your whole crackers into a ziplock bag, crush with a rolling pin, then add the melted butter directly into the bag with crushed crackers…then use your fingers to mash the bag around combining the butter & crackers). When the casserole has baked for 30 mins, sprinkle it with the buttered crumbs & return to the oven until brown.
