Bean & Cheese Quesadillas

4 whole-wheat tortillas (11 inch)

1 16 oz can fat-free refried beans
1 cup shredded cheese blend
2 cups shredded lettuce
1 cup prepared salsa (optional)
1/2 avocado, diced
1/4 cup sour cream
2 Tb chopped fresh cilantro, (optional)
*handful of mushrooms & onions, saute’ in oil (optional)
Spread each tortilla with a portion of the beans & top each with 1/4 cup cheese. Cook tortillas in a large nonstick skillet over med-low heat until tortillas are lightly browned & cheese has melted. Cut each tortilla into wedges. Top with lettuce, salsa, avocado, sour cream & cilantro. Makes 4 servings
I scaled this recipe down to 1 serving & the only problem is you will have leftover refried beans, but that can be used in another recipe. I did not use cilantro or salsa. This was fantastic. The fresh ingredients on top made it taste so good. It will be a keeper & go to any time I have tomatoes, avocado & lettuce on hand. *I also added a small portion of sautee’d mushrooms & onions to the toppings b/c I had it on hand. YUMM.
