Birthday Club Brunch

My mother-in-love made these two recipes for a lady’s brunch that I happened to be in town for. They were both so great! She also made breakfast pizza which has been a family favorite for years after my mom first introduced it to us. Maybe I’ll put the breakfast pizza recipe up sometime. 

South of the Border Egg Casserole

10 eggs
4 oz. can green chilies
1 lb. Monterey Jack Cheese
24 oz. cottage cheese
1/2 cup flour
1 tsp. baking powder
1/2 cup melted butter

Mix together and bake for 15 minutes at 400, then reduce heat to 350 and continue cooking at least 30 minutes until golden and bubbly.

French Toast

1 loaf French Bread
8 large eggs
2 cups half and half
1 cup milk  (I used 1/2 c. of milk and 1/2 c. of imitation vanilla flavoring)
2 tbsp. sugar
1 tsp. Vanilla extract
1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
dash salt

Slice bread, 1 inch thick.  Arrange in buttered baking dish, overlapping slices (almost standing up).  (I didn’t  exactly understand this so I just laid them flat and touching.
Combine all ingrediants until blended, but not too bubbly.  Pour over bread, being sure to get between slices.
Cover and refrigerate overnight.

Praline Topping 

1/2 lb butter
1 cup light brown sugar
1 cup pecans
2 tbsp light corn syrup
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg

Top with Praline Topping and bake in 350 degree oven for 40 minutes or until puffed and golden.
